Pom contains invalid organizationUrl

**Describe the bug**

The pom contains the  `<organizationUrl>` https://springdoc.github.io/springdoc-openapi which seems to be a dead link. I get a 404 when trying to visit it. Visiting "https://springdoc.github.io" works, so I guess it's just outdated.
