improve transactions example [DATACOUCH-609]

The current transactions example shows mutation of just a single entity in a single bucket.  The primary use case for txns is really atomicity across multiple documents, so it'd be great for the example to reflect that.

Perhaps take inspiration from the Couchbase documentation on this?
