issue using SDC/couchbase java sdk 3.4.9 due to io.opentelemetry

couchbase java sdk 3.4.9 / core-io-2.4.9 upon which it depends contains io.opentelemetry classes in the root of the jar (i.e. they haven't been shaded) and this break Boot's OTel integration.

The issue will be fixed in Couchbase Java SDK 3.4.10. Until that is released (in September), I'll put spring-data-couchbase main/5.0.x/5.1.x on 3.4.8 - there are few changes from 3.4.8 to 3.4.9 (frontier-sr-8 to frontier-sr-9). https://github.com/couchbase/couchbase-jvm-clients/commits/master
