Investigate use of poetry for dependency management

WHY

We currently use both poetry and a requirements.txt file for managing dependencies. We want to investigate if complexity could be reduced by using poetry alone.

WHAT

Investigate possible options for the sdk using poetry. Discuss with the team and implement.

TESTS

Add tests as required.

DONE

A decision has been made regarding the management of dependencies and any required changes have been made and tested.
