OpenAPI 3.1 unevaluatedProperties support

I'm wondering if this library is capable of validating OpenAPI 3.1.

In particular I'm interested in the unevaluatedProperties feature.

For me it looks like this needs annotationCollectionEnabled = true on the json-schema-validator, which I is afaik nothing that can be configured when using openapi-schema-validation.

Looks like this is caused by OpenAPI parser not supporting these fields hence and loosing them when parsing.

I opened networknt/openapi-parser#54 to address that.

Unfortunately this ticket is closed, but still after half a year the openapi-parser 2.1.35 that fixes that did not arrive in any release of openapi-schema-validation.

Practically this is issue is is still valid (not completed)
