Add examples for mapping a Json in the documentation

Some tests showing the different approaches are:

• UserJsonTypeTest
• StringToJsonTypeTest
• JsonTypeTest

Note that Hibernate 6 has built-in support for some sort of native JSON mappings.

We should test that stuff and see how it works in HR.
