Could you check if you installed other languager server for lua?

I have a similar issue to this.

I don't have any other Lua extensions installed and iif I disable this extension, I get this second picture.

@Domiran, that is configurable using completion.callSnippet. One is simply completing the function call, i.e. ...ction(), while the other completes the whole signature, i.e. ...ction(x, y, z).
